Peach Salad & Hard Tropical Punch

Peach season is in full swing in the Garden State. My local farmer’s market is getting ready to celebrate their annual Peach Festival and I am excited to have some peach cobbler (I’m going to have to learn how to make that). Since it’s been so hot, I’ve been trying to avoid using my oven and heating up the kitchen. So, this week I came up with a salad to pair with a fruity cocktail.

Hopefully it’ll help me beat the summer heat!

The Drink: 

I’m calling this drink a Hard Tropical Punch. It’s got a lot of fruit flavors and just a hint of mint. Please drink responsibly.

What you’ll need: 

  • 2 parts Club Soda or Bubbly Water
  • 1 part Coconut Water
  • 1 part Pineapple Juice
  • 1 part Mango Juice
  • 1 shot of Peach Vodka
  • 1 shot of White Rum
  • Mint Ice (freeze fresh mint in water)

Fill a tall glass or a highball glass with the mint ice. Combine club soda/bubbly water with the coconut water, pineapple juice, mango juice, peach vodka, and white rum and mix well. Serve chilled with a slice of peach for garnish.

Level of Recommendation: It’s fruity, smooth, and fresh.

The Food: 

What you’ll need: DSCN1351

  • Romaine Lettuce
  • 1 Peach
  • 1/4 cup of Strawberries
  • 1/4 of a small Red Onion
  • Handful of Almonds
  • Some Brie

Wash and dry the romaine lettuce. Chop into chunks and place in a bowl. Slice the peach, strawberries, red onion, and brie. Place on top of the romaine lettuce. Thinly slice some brie and sprinkle around the salad.

Serve with hearty bread.

The Pairing:

The salad is light and crisp with a nice crunch. Brie adds a touch of creaminess and saltiness that pairs well with the fresh fruit and drink. The Hard Tropical Punch helps to bring out the flavors in the fruit. I personally don’t think this salad needs dressing with the combination of flavors.

Level of Recommendation: Good for a hot summer day when you want to cool off.
